As Ramadan nears its end, many people may feel some tiredness and dehydration. After a full day of fasting, the body needs light, nutritious food to stay refreshed.
A hot vegetable soup at iftar or dinner can be a great choice. It brings together the nutrients of several vegetables and is easy to digest. A tasty mixed vegetable soup can be made at home with very few ingredients.
Ingredients
- Tomato, carrot, green peas and beans: 3 cups in all
- Salt to taste
- Cumin powder: half a teaspoon
- Black pepper powder: half a teaspoon
- Oil: 1 teaspoon
- Water: 2 cups
- Chopped coriander leaves as needed
- Curry leaves
Method
First cut the tomato, carrot, green peas and beans into small pieces. Put all the vegetables in a pressure cooker, add two cups of water, cover and boil the vegetables well.
When the vegetables are cooked, blend them well in a blender, then strain through a sieve to make a smooth mixture.
Heat a teaspoon of oil in a pan and add the curry leaves. Pour in the soup mixture, add salt to taste, cumin powder and pepper, and stir for a few minutes. Finally sprinkle over the chopped coriander.
Your nutritious mixed vegetable soup is ready. Serve it hot on the iftar table.
