Hong Kong's Mango Pillow Dessert for an Afternoon Snack

Hong Kong's mango pillow dessert wraps whipped cream and ripe mango in thin pancakes, a different way to enjoy the season's mangoes.

The mango is a fruit we all love. We make all kinds of tasty pickles to keep it through the year, and in the same way we make various desserts to enjoy the many flavours of ripe mango.

For a different taste of ripe mango today, you can make Hong Kong's mango pillow dessert. It looks as beautiful as it tastes. The recipe has two parts: the pancake and the filling.

Ingredients


  • Flour: 1/2 cup
  • Cornflour: 2 tablespoons
  • Egg: 1
  • Sugar: 1 tablespoon
  • Liquid milk: 1 cup
  • Melted butter: 1 tablespoon
  • A little yellow food colouring or mango flavouring
  • Whipping cream: 1 cup (whipped cold)
  • Mangoes cut into small pieces: 2
  • Icing sugar: 2 tablespoons
  • Vanilla essence: a few drops

Method


For the pancakes, mix the flour, cornflour and sugar in a bowl. Add the egg, milk and butter and mix well into a thin batter. You can add some yellow colouring or mango flavour if you like, but this is optional. Leave the batter to rest for 15-20 minutes.

Lightly oil a non-stick pan, pour in a little batter and spread it thin like a flatbread. Lift it off when the underside is lightly browned; there is no need to turn it. Make all the pancakes this way and let them cool.

Put the cold whipping cream in a bowl and beat it with an electric or hand beater until it becomes foamy. Mix in the icing sugar and vanilla essence; skip this step if you want it less sweet. Fold in the mango pieces, keeping some aside for decoration.

Place whipped cream and mango pieces on each pancake, fold the pancake in from all sides into a pillow shape, and turn it over gently so the closed side is underneath. Chill in the fridge for 30 minutes.

Finally, decorate the pancake pillows with some mango pieces and mint leaves and serve. You can drizzle a little chocolate sauce or sprinkle icing sugar if you like.

Tips


  • Make sure the whipping cream is well chilled, or it will not whip properly.
  • Use well-ripened, sweet mangoes, or the flavour will not come through.
  • You can put large or small pieces of mango inside the pancakes, as you prefer.
