An Easy Recipe for Ripe Mango Payesh

Ripe mangoes blended into milk and aromatic rice make a simple payesh that can be served chilled.

Almost everyone makes and eats fancy desserts with ripe mangoes. All kinds of tasty dishes can be made with mangoes, among them mango milkshake, mango ice cream, mango mousse, mango custard and mango lassi.

You can also make payesh with ripe mangoes. Taste it once and the flavour of mango payesh will stay with you. Here is an easy recipe.

Ingredients


  • Polao rice, three-quarters of a cup
  • Milk, 1 litre
  • Mangoes, 2, blended
  • Sugar, to taste
  • Salt, to taste
  • Nuts, 2 tablespoons
  • Raisins, 2 tablespoons

Method


First boil the milk until it thickens. Then add the rice to the thickened milk and keep stirring. When the rice is cooked, mix in the sugar and salt.

When the water released by the sugar dries up and the mixture thickens a little, add the raisins and nuts. When the rice is cooked, stir in the mango and take the pan off the heat as soon as it comes to the boil.

Always use ripe, sweet mangoes when cooking payesh; if the mangoes are sour, the milk will curdle. Pour the payesh into a serving dish and garnish with nuts and raisins. If you like, chill it in the fridge before eating.
