Beat the Heat With Cool Ripe Mango Barfi

A simple recipe for mango barfi made with ripe mango, sugar, milk and desiccated coconut.

The mango is the king of fruits, and ripe mangoes have now started to reach the market. All sorts of tasty dishes can be made with mango, among them mango milkshake, mango ice cream, mango mousse, mango custard and mango lassi.

But have you ever had mango barfi? You can make it with just four ingredients. Here is an easy recipe.

Ingredients


  • 1 cup mango, chopped
  • 1 cup sugar
  • Half a cup of milk
  • 2 cups desiccated coconut

Method


First blend the chopped mango with the milk in a blender. Pour the mango paste into a pan, add the sugar and keep stirring. Then mix in the desiccated coconut well and cook for about 20 minutes.

Stir often so it does not stick to the bottom, and keep stirring until the mixture comes away from the sides of the pan. Then transfer the mixture to a dish and level the top with a spoon.

Wait 30 to 40 minutes. When the mixture has set, turn the dish over onto a plate and cut the mango barfi into the shapes you like. Once you taste it, you will not forget it.
