Kolmi Shak Omelette: An Extraordinary Twist on an Everyday Dish

Kolmi shak and eggs make a quick, healthy omelette that children and adults alike will enjoy with rice.

Leafy greens are tasty and very nutritious. Eating them regularly gives the body vitamins and minerals it needs. If you want a simple, different recipe with the same greens, try an egg omelette made with shak. The protein in the eggs adds to the nutrition of the greens, making a complete, healthy dish.

Going beyond the ordinary omelette, this greens-and-egg version will please young and old alike. Served hot with rice, it tastes even better, and because it is quick to make with simple ingredients, it can be added to everyday meals.

How to make it


First wash the kolmi shak well in water, without the stalks. Squeeze out the water thoroughly and chop it finely. Beat the eggs well with salt to taste. Heat a little oil in a pan and add cubed potatoes tossed in a little salt. Fry until the potatoes are soft and cooked.

Add chopped onion. When the onion softens, add the chopped kolmi shak and green chillies and fry for two to three minutes. Take the mixture off the heat and let it cool completely.

Once cool, mix it well into the beaten eggs. Heat oil in a frying pan and pour in the mixture. Lower the heat and cover with a lid so the omelette cooks through.

When the top has set, turn it over carefully and fry the other side until golden. Check with a toothpick or fork that the inside is not raw. When done, serve hot.
