Daily cooking can feel slow and tiresome on a busy day, especially for people who are new to it. A few simple tricks save time and improve the taste.

If a curry is too salty, knead a little flour into small balls and leave them in the curry for a while to take some of the salt out. A piece of raw papaya, skin on, makes meat cook faster. Thicken a gravy with cornflour mixed in water, and thicken a thin soup by mashing in a boiled potato and simmering it a little longer.

Soak a lemon in hot water for a while before cutting it to get more juice. For separate grains of rice, let the washed rice stand a while or add a little oil while it cooks. A pinch of sugar can keep green vegetables bright. A sprinkle of water near the end of frying onions for beresta browns them faster.

A few cloves in the sugar jar keep ants away, and a little sugar or blotting paper in the tin keeps biscuits crisp. Peel boiled eggs once they have cooled rather than while hot, and less of the white sticks to the shell. For a date-jaggery payesh, add the jaggery after the milk has thickened and cooled a little, and the milk is less likely to split.

Boiling potatoes and eggs together saves time and fuel. Setting out the ingredients and cutting the vegetables before you start, and planning the next day's meals the night before, cut cooking time a great deal.
