Recipe: Jute Leaves Fried With Prawns and Peanuts

Jute leaves, a cheap and nutritious green, get a different treatment fried with prawns, peanuts and a garlic-chilli mix.

Jute leaves (pat shak) are an easily available and nutritious vegetable. They are not only good for health; cooked properly, they are also colourful and tempting. Here we present jute leaves a little differently, fried with prawns and peanuts.

The taste of prawns and the aroma of peanuts combine with the softness and mild flavour of jute leaves to make a wonderful pairing. This easy, quick and tasty dish will add to the pleasure of a meal. Here is the recipe.

First discard the raw stalks and keep only the leaves. Wash them well and cut into small pieces. Heat oil in a wok, fry the peanuts and set them aside. In the same oil fry chopped garlic and onion until crisp and set aside. Lightly fry dried red chillies, then grind them together with the garlic and onion.

Now, in the same wok, fry the prawns rubbed with turmeric and salt. Add the jute leaves, sprinkle with salt and fry until the leaves are soft. Finally mix in the fried peanuts and the chilli-garlic mix well and take off the heat. Your tempting jute leaves fried with prawns and peanuts are ready.
