Pumpkin pie, popular abroad especially around Halloween, can be made at home with a few ingredients. Barta24's lifestyle desk gives a simple method.

For the crust: 1 cup of flour, half a cup of cold butter, 2 tablespoons of sugar, a pinch of salt and cold water as needed. For the filling: 1 cup of boiled pumpkin, 2 eggs, half a cup of milk, half a cup of sugar, 2 tablespoons of condensed milk, half a teaspoon of ground cinnamon, a little ground ginger, a pinch of nutmeg and a few drops of vanilla essence.

Mix the flour, sugar and salt, rub in the cold butter by hand and add cold water a little at a time to make a dough. Roll it out into a pie dish and prick it a few times with a fork.

Mash or blend the boiled pumpkin and mix in the eggs, milk, sugar, condensed milk, cinnamon, ginger, nutmeg and vanilla until smooth. Pour the filling into the crust and bake in an oven preheated to 180C for 40 to 50 minutes; the pie is done when a skewer in the centre comes out almost clean.

Let it cool completely, chill it in the fridge for a while and serve, with whipped cream on top if you like. If the pumpkin is watery, drain it before blending; strain the filling for a smoother texture; and adjust the cinnamon and nutmeg to taste.
