For a rushed breakfast, an afternoon snack or an office or school tiffin, sandwiches are hard to beat. They need little oil or spice, and a filling of vegetables or egg adds nutrition. Here are five to ring the changes.
Grilled vegetable sandwich: butter a slice of bread and layer tomato, cucumber, boiled potato and your favourite chutney. Cover with a second slice and grill in a sandwich maker until crisp. Serve with tomato ketchup or green chutney.
Egg mayo sandwich: grate boiled eggs and mix with mayonnaise, a little salt and pepper. Spread on toasted bread, cover with another slice and grill lightly.
Paneer tikka sandwich: coat pieces of paneer in yoghurt, turmeric, chilli and salt and leave for a while. Place between two slices and grill. Add onion, capsicum or a little cheese if you like.
Cheese corn sandwich: boil corn kernels and mix with grated cheese and a pinch of oregano. Grill between two slices so the cheese melts into the corn.
Chutney sandwich: spread hot green chutney on bread, lay thin slices of tomato and onion on top, cover and toast lightly. Only a few ingredients are needed.
