A special day calls for something a little different. When the plate holds something fragrant, refined and out of the ordinary, the moment comes alive. One such regal and delicious dish is fish khoya polao.
Soft, fluffy polao combined with spice-coated fish creates a unique taste. For family or for entertaining guests, this dish can easily become the centrepiece of your special day. Here is the recipe.
Preparing the fish and rice
First rub the pieces of fish with salt, turmeric, chilli powder and lemon juice, fry them in ghee and set aside. Take rice that has been washed and drained in advance, and mix it well with ginger paste, green chilli paste, black cardamom powder, nutmeg powder, mace powder, milk soaked with saffron, chopped cashew nuts, raisins and khoya kheer.
Cooking the polao
In the same ghee used to fry the fish, temper bay leaves and shahi jeera. Add the mixed rice and fry for a while over a medium flame. Now add hot water exactly double the quantity of rice, and salt to taste. Lower the flame and cover the pan. When the rice is half cooked, arrange the fish on top, cover again and cook for a while longer. When the rice is fully cooked, scatter fried onion or beresta on top and serve the delicious fish khoya polao.
