Crispy oats and semolina chilla with vegetables for breakfast

Toasted oats and semolina, yoghurt and chopped vegetables make a quick, crisp chilla cooked with little oil.

Breakfast should be tasty and nourishing. Oats add fibre, and vegetables mixed into semolina boost both flavour and nutrition. A crisp oats and semolina chilla takes little time.

Dry-roast one cup of oats and one cup of semolina lightly in a pan. Tip them into a bowl, stir in sour yoghurt and add enough water for a thick batter. Cover and rest for about 15 minutes so the semolina swells and the batter is ready.

Mix in chopped carrot, beans, capsicum, onion, green chilli and coriander leaves, with salt to taste and a pinch of black pepper.

Heat a griddle, spread a little oil and pour on the batter in a thin layer. Cook over medium heat until the underside is done, then turn and cook the other side until golden and crisp.

Serve hot with your favourite chutney or yoghurt.
