Crispy chicken and vegetable rolls for an afternoon snack

Thin flour crepes filled with chicken, carrot, cabbage and capsicum cooked in soy and tomato sauce, dipped in egg and breadcrumbs and fried, make homemade chicken vegetable rolls.

Instead of buying snacks, crisp chicken and vegetable rolls, crunchy outside and filled with spiced meat and vegetables, can be made from everyday kitchen ingredients. Dinajpur TV's lifestyle desk has the recipe.

You need a cup of flour, a cup of diced chicken, one and a half cups of chopped carrot, cabbage and capsicum, half a cup of chopped onion, a tablespoon of chopped green chilli, a teaspoon of ginger-garlic paste, half a teaspoon of ground black pepper, a tablespoon of soy sauce, two tablespoons of tomato sauce, two eggs, a cup of breadcrumbs or biscuit crumbs, oil, water and salt.

For the filling, fry the onion, green chilli and ginger-garlic in two tablespoons of oil until lightly browned. Add the vegetables and boiled chicken with the soy sauce, tomato sauce, pepper and salt, cook for two to three minutes on a medium flame until well coated, then take off the heat and let it cool.

For the wrappers, make a thin, smooth batter with the flour, egg, a pinch of salt, a teaspoon of oil and water. Brush a non-stick pan with oil, pour in a little batter and swirl it thin; on a low flame the sheet lifts off in a few seconds.

Put filling on each sheet, fold in the sides and roll tightly, sealing the edge with a paste of flour and water. Dip the rolls in beaten egg, coat them in breadcrumbs and fry on a medium flame, turning, until golden and crisp. Serve hot with tomato sauce or mint chutney.
