Make Tasty Keema Beguni at Home

Crisp beguni with a juicy, spiced chicken mince filling is easy to make at home for a different taste at iftar.

Want a slightly different taste at iftar? Rather than buying it outside, you can make delicious keema beguni at home with very simple ingredients. A juicy, spicy mince filling inside crisp aubergine fritters gives great flavour and homely satisfaction in every bite. Here is the recipe.

First fry the chicken mince, chopped green chillies, oregano and black pepper powder together in oil. Next cut the aubergine into long, thick slices, cutting them so there is room in the middle for the filling. Wash them clean, rub with salt to taste and set aside for 10 minutes. Then stuff the mince filling into the space in the aubergine and add grated cheese.

Meanwhile, make a batter of gram flour (besan) with ginger paste, turmeric powder, chilli powder, salt, baking powder and water. Carefully dip the aubergine in the batter, taking care that the mince does not come out. Finally, deep-fry and lift out. Serve the tasty keema beguni at iftar.
