Cauliflower, known as the king of vegetables, is usually eaten fried, in curries or in soup. But have you ever thought that this white, flower-like vegetable could be made into a sweet payesh? Yes, you heard right: cauliflower is not only nutritious but can also surprise in sweet recipes. As for the taste, it is creamy, somewhat like a blend of coconut and milk, light and wonderfully mild. Here is how to turn this unexpected vegetable into payesh.

Method


  • First cut the cauliflower into small pieces.
  • Heat one litre of milk, add the rice and set it to cook.
  • When the rice is cooked, add half a litre of milk and the chopped cauliflower and bring it to the boil again.
  • Once it is cooked, add molasses, another half litre of milk, and ground cinnamon and cardamom, and keep stirring.
  • When the milk thickens, add condensed milk.
  • Keep stirring and mix in chopped nuts and raisins. The cauliflower payesh is ready.
