Among winter vegetables, cauliflower is both easy to find and well suited to many tasty dishes. If you want something different from everyday curries, vegetarian (niramish) cauliflower rezala is an excellent choice. Made with light spices and the smooth taste of milk, it brings a royal aroma and flavour without heat or pungency. Whether for guests or a special meal at home, it will add something to the table. Here is the recipe.
First cut the cauliflower into medium pieces and wash well. Heat oil in a karai and lightly fry the cauliflower. Meanwhile, soak poppy seeds, cashews and raisins in hot milk, and after a while blend them.
Now heat oil and ghee in a karai and temper with dried chillies and crushed black pepper. Add the nut and milk mixture and cook on a low heat. When it is cooked, add the fried cauliflower along with coriander powder, Kashmiri chilli and salt to taste. Then add whisked sour yoghurt and cook for 5-6 minutes. When the oil separates, add a little hot water, cover and cook for 5 minutes more. When the oil separates again, add sugar to taste. Cook for another 2 minutes, then add garam masala, 1 tablespoon of rose water and a little kewra water, cover for 2-3 minutes and turn off the heat. The delicious vegetarian cauliflower rezala is ready.
