A Different Taste From Winter Vegetables: Cabbage Kofta

Cabbage, usually cooked as a curry or bhaji, can be turned into koftas that are crisp outside and soft inside.

When winter comes, the markets fill with fresh vegetables of many colours, and cabbage is at the front of the list. It is usually limited to curries or bhaji, but cooked a little differently this vegetable can become a delicious snack.

Cabbage kofta is just such a dish: crisp outside, soft inside and full of flavour. As an afternoon snack or for entertaining guests, this new taste from winter vegetables will easily win hearts. Here is the recipe.

First mix the shredded cabbage with a little salt and leave it for 5 minutes, then squeeze out the water. Mix in boiled potato, onion, green chillies, ginger paste, powdered spices and gram flour or plain flour. Shape the mixture into small round koftas. Finally, deep-fry them on low heat, and the koftas are ready.
