A quick breakfast pizza made from eggs and bread

Torn bread mixed with eggs, vegetables and cheese makes a pan pizza in a few minutes, with no oven needed.

If eggs and bread every morning are getting dull, the same two ingredients can make an egg-and-bread pizza. Made with bread, eggs, vegetables and cheese, it is simple and adds variety to children's breakfasts.

Ingredients: 3 eggs, 3 rotis or slices of bread, 2 chopped tomatoes, chopped onion, chopped capsicum, cheese to taste, chopped coriander leaves, ground black pepper, oregano, chilli flakes, and salt and butter to taste. A little grated carrot can be added.

Beat the eggs in a bowl. Tear the bread into small pieces, add them to the eggs and mix well. Add the onion, tomato, capsicum, coriander, salt and a little pepper and mix again.

Heat butter in a frying pan, pour in the mixture and spread it evenly. Cover and cook on the lowest heat for 3 to 4 minutes, then turn it over carefully.

Spread tomato sauce on top and arrange cheese, onion, capsicum and tomato over it. Add more cheese, sprinkle with oregano and chilli flakes, cover and cook for another 2 minutes on low heat.

When the cheese has melted, take it off the heat, cut it into triangles like a pizza and serve hot.
