Dolna pitha: a soft steamed rice cake with date molasses and coconut

Rice flour, milk, date molasses and coconut make a soft dolna pitha at home, steamed for about ten minutes.

Pitha season is coming. Among Bengal's traditional rice cakes, dolna pitha is soft and fluffy, sweetened with date molasses and coconut. A recipe on Bangla Tribune's lifestyle page shows how to make it at home with a few ingredients.

You will need 200 grams of rice flour, 1 cup of liquid milk, half a cup of powdered milk, 1 cup of date molasses (khejur gur), 1 cup of grated coconut, 4 cardamom pods and a pinch of salt.

Put the liquid milk, date molasses, grated coconut, rice flour, powdered milk, cardamom and salt in a pan and mix well. Cover and cook over medium heat for 2 to 3 minutes. When the mixture thickens, take it off the heat and let it cool a little.

Once cool, knead it by hand and shape it into small round balls. Roll each ball in grated coconut to coat it well.

Heat water in a pan, set a perforated dish or steamer over it, arrange the pithas, cover and steam for about 10 minutes. When they are soft and fluffy, take them out and serve hot; they go well with a cup of tea on a winter morning.
