Seasonal Vegetable Fritters for a Rainy Afternoon

Crisp fritters made with seasonal summer vegetables can turn vegetables into a snack everyone enjoys.

Many kinds of fresh vegetables are in the market in summer. Seasonal vegetables are not only tasty but full of nutrition, so keeping them in the daily diet is good for the body.

Yet many children, and adults too, show little interest in vegetables. Making tasty fritters (bora) with them can easily turn vegetables into a favourite snack.

In this season you can make delicious bora with ridge gourd, bottle gourd, pointed gourd, pumpkin, bitter gourd or yardlong beans.

Ingredients


  • Chopped ridge gourd, half a cup
  • Chopped bottle gourd, half a cup
  • Chopped carrot, half a cup
  • Chopped onion, 1
  • Chopped green chillies, 2
  • Chopped coriander leaves, 1 tablespoon
  • Gram flour (besan), 1 cup
  • Rice flour, 2 tablespoons
  • Salt to taste
  • Turmeric powder, a little
  • Oil for frying

Method


First put all the chopped vegetables in a bowl and squeeze lightly to drain off excess water. Add the onion, green chillies, coriander leaves, gram flour, rice flour, salt and turmeric powder and mix well. If needed, add a little water to make a thick mixture.

Heat oil in a karai and drop in small portions of the mixture in the shape of fritters. Fry on a medium flame until golden and crisp on both sides, then lift them out.

Serve hot with tea. They taste even better with tomato sauce or coriander chutney.
