A Dish Made With Big Fish

A recipe for sweet and sour crispy ginger honey fish made with rui fillet and served with fried rice, pulao or hot rice.

Sweet and sour crispy ginger honey fish


Ingredients 1: 250 g rui fish fillet, 2 tablespoons ginger juice, 1 tablespoon fish sauce, 1 tablespoon soy sauce, 1 tablespoon lemon juice and 1 teaspoon ground black pepper.

Ingredients 2: 3 tablespoons flour, 3 tablespoons cornflour and a little salt.

Ingredients 3: 2 tablespoons julienned ginger, 2 tablespoons finely chopped garlic, 2 tablespoons finely chopped onion, 1 tablespoon fish sauce, 1 tablespoon light soy sauce, 1 tablespoon oyster sauce, 2 tablespoons honey, 1 teaspoon paprika, 1 teaspoon ground black pepper, a little salt and 5 tablespoons oil.

Method


First cut the fish into pieces as you like, rub with all of ingredients 1 and leave for 30 minutes. Then mix all of ingredients 2 with enough water to make a batter, dip the fish in it and deep-fry until golden brown.

Next heat the five tablespoons of oil, fry the ginger and set it aside. In the same oil fry the garlic and onion, add half a cup of water, then add the rest of ingredients 3 one by one, stir briefly and take off the heat.

Pour over the fish in a serving dish, top with the fried ginger, garnish as you like and serve with fried rice, pulao or hot rice.
