How to Make Mango and Coconut Ice Lollies

A two-layer ice lolly of ripe mango and coconut milk, made at home without artificial colour or flavour, offers quick relief on a hot day.

On a hot day, a cold ice lolly can bring instant relief. If it is made with seasonal ripe mango and coconut milk, it adds an extra twist to the taste.

Mango and coconut lollies can be made at home with a few simple ingredients. Made without artificial colour or flavour, this healthy and tasty frozen treat can be enjoyed by everyone from children to adults. Here is how to make them easily.

First put mango puree, milk and sugar into a blender and blend well into a smooth mixture. Fill popsicle moulds halfway with the mixture and put them in the freezer for 1 to 2 hours so the first layer sets lightly.

Meanwhile, in a separate bowl, mix coconut milk, sugar syrup (or sugar) and vanilla essence well. When the mango layer has set a little, pour the coconut mixture over it. Insert the sticks and return the moulds to the freezer for 7 to 8 hours, or overnight, to freeze completely.

To serve, dip the mould in water for 5 to 10 seconds, then gently ease the lolly out and serve chilled.
