Fresh green peas are in the markets as winter begins. On a day off, rice, lentils, peas and boiled eggs make an easy khichuri for the family.

Ingredients: 1 cup polao (aromatic) rice, half a cup of mung or masoor dal, half a cup of green peas, 2-3 boiled eggs, half a cup of chopped onion, 4-5 green chillies, 1 teaspoon ginger-garlic paste, turmeric, chilli and cumin powder to taste, garam masala, bay leaves, oil or ghee, and salt.

Wash the rice and dal and drain them. Heat oil or ghee in a pot and fry the bay leaves and onion until golden. Add the ginger-garlic paste and ground spices with a little water and cook them down well.

Add the rice, dal and peas and fry for a few minutes. Pour in enough hot water, add salt and green chillies, cover and cook on a medium flame. When the rice and dal are done, sprinkle a little ghee and garam masala on top and leave it to rest on low heat.

Serve the khichuri hot with the boiled eggs, with a salad or bhorta on the side if you like.
