Hog plums, amra in Bengali, are in the markets now. Cook Anisa Akter Nupur has shared two recipes for the sour fruit with Ajker Patrika.
Hilsa with amra: 500 grams hog plums, 6 pieces of hilsa, 1 tablespoon chopped onion, 1 teaspoon chopped garlic, 1 teaspoon each turmeric and chilli powder, whole mustard seed, salt, 2 tablespoons oil, a little sugar, 3-4 green chillies and water.
Method: heat the oil and cook the onion and ground spices with a little water. Add the fish, cook it through and set it aside. Put the hog plums into the same spices with water and cook until soft, then add the fish and cook for 3 minutes. Temper mustard seed in hot oil in another pan, stir it into the fish, add the sugar and take off the heat.
Sweet-sour amra: 1 kilogram hog plums, 1 teaspoon whole black mustard seed, 3-4 whole dried chillies, 1 teaspoon each turmeric and chilli powder, salt, 1 teaspoon sugar, 2 teaspoons mustard oil and water.
Method: heat the oil and temper the black mustard seed and dried chillies. Add the cut hog plums, ground spices and salt and stir-fry, then add water and cook until soft. Finish with the sugar.
