Everyone loves the taste of hilsa. For a family meal or a special dinner, you can serve hilsa pulao at this time of year. Once you taste it, you will never forget it. Here is how to make this special dish quickly.
Ingredients
- Pulao rice, half a kg
- Hilsa, 10-12 pieces
- Ginger paste, 1 teaspoon
- Garlic paste, half a teaspoon
- Sour yoghurt, 1 cup
- Salt to taste
- Cinnamon, 2 pieces
- Cardamom, 4
- Onion paste, three-quarters of a cup
- Sliced onion, half a cup
- Water, 4 cups
- Green chillies, 10
- Sugar, 1 teaspoon
- Oil, half a cup
Method
Cut the hilsa well into pieces and wash them. Rub the fish with ginger, garlic, salt and sour yoghurt and leave to marinate for 15 minutes. Heat oil in a pan, add the cinnamon and cardamom and stir, then add the onion paste and fry the spices.
When the spices are well fried, add the fish and cook covered on low heat for 20 minutes. After a while, add the sugar and four green chillies and turn the fish once. When the water has dried and the oil rises to the top, take it off the heat. Lift the fish out of the spice mixture.
In another pan, heat 2 tablespoons of oil and fry the sliced onion until crisp and golden. Set the fried onion aside. Now fry the fish spice mixture and the rice in the oil for a while, add the water and salt to taste, and cover.
When the water has almost dried, leave on low heat for 15 minutes, then take the pulao off the stove. In a large dish, lay the fish over some of the pulao, cover the fish with the rest of the pulao and leave covered for 10 minutes. Your hilsa pulao is ready. Serve it with the fried onion scattered on top.
