Enjoy Hilsa Khichuri This Monsoon

A recipe for hilsa khichuri, rice and lentils layered with spiced hilsa, for the monsoon season.

It is hard to find anyone who does not like hilsa, and Bengalis are enchanted by its taste. Hilsa can be cooked into many different dishes. Some like hilsa bhuna, some prefer it in curry, and others eat it fried.

Among all the hilsa dishes, try hilsa khichuri. Now is the perfect time for it, so do not wait: make mouth-watering hilsa khichuri at home in very little time.

Ingredients


  • Polao rice, 500 grams
  • Red lentils and mung dal combined, 40 grams
  • Hilsa, 4 pieces
  • Finely sliced onion, half a bowl
  • Garlic paste, 1 teaspoon
  • Green chillies, 8-10
  • Salt, to taste
  • Bay leaves, 2
  • Chopped garlic, 1 tablespoon
  • Chopped ginger, 2 tablespoons
  • Thickly sliced onion, 1 bowl
  • Turmeric powder, 1 tablespoon
  • Chilli powder, 1 tablespoon
  • Cumin powder, 1 teaspoon
  • Mustard oil and water, as needed

Method


First wash the rice and lentils well together. Heat oil in a pot and add the onions. Then add the chopped spices one by one and stir.

Next add the ground spices and salt to taste, and fry the spices well. Then add the rice and lentils and fry them well. Now add enough hot water and the green chillies, cover and cook.

Meanwhile heat mustard oil in a pan. Cook the hilsa pieces with the spice paste, ground spices, green chillies and salt to taste until the sauce clings to the fish.

When the khichuri is nearly done, take out half of it and lay the cooked fish on top. Cover with the rest of the khichuri. Cook on the stove for 10 more minutes and serve the hilsa khichuri piping hot.
