Raw mangoes have arrived in the market. Some eat them rubbed with salt and chilli, others add them to dal, and for some they will fill jars as pickle for the whole year. But why not try them in a curry? Cook chicken with raw mango and green chillies. Try this South Indian recipe once, and if you like it, it will become one of yours.
Ingredients
- Chicken: 400g
- Medium raw mangoes: 2
- Green chillies: 7-8 (to taste)
- Large garlic cloves: 5
- Ginger: 1 piece
- Chopped onion: 1 large
- Onion paste: 1 medium onion
- Chopped coriander leaves: 1 cup
- Whole cumin: 1.5 teaspoons
- Whole black peppercorns: 4 to 5
- Dried chilli: 1
- Ground coriander: 1 teaspoon
- Ground cumin: 1/2 teaspoon
- Oil: 2 teaspoons
- Salt to taste
- Sugar: a little
Method
First make the marinade. Peel the mangoes and cut them into pieces, then grind them well with the ginger, garlic and 5-6 green chillies. Grinding on a stone slab is best, but a blender also works. When it is finely blended, add the chopped coriander leaves and blend again. The marinade is ready.
Wash the chicken pieces well, drain and put them in a bowl. Sprinkle with a little salt, rub in the marinade and onion paste thoroughly and leave for 30 minutes.
Heat the oil in a cooking pot. Add the whole cumin, peppercorns and the slit dried chilli and fry. When the aroma rises, add the chopped onion and stir for 5 minutes so the aroma gets into the onion. Keep the heat low. When the onion turns brown, add the ground cumin and coriander. Stir briefly, then add the marinated chicken and mix everything evenly.
After stirring on low heat for a while, rinse whatever spice paste is left in the marinating bowl and pour it into the pot. Check the amount of water and the salt, and add a little sugar. Slit the remaining green chillies down the middle and scatter them on top. Cover the pot and cook until the chicken is tender.
When the chicken is cooked, scatter chopped coriander leaves on top. It is ready to taste.
