Three Mutton Dishes for a Holiday Table

Tasnia Rahman Srishti gives three mutton recipes for the holiday table: mutton pitali, Shahi korma and chilli mutton.

On a day off, dishes of meat are the attraction at the dining table. The whole family likes to enjoy tasty food, and some homes have guests too. Tasnia Rahman Srishti has shared three mutton recipes for the holiday.

Mutton pitali


First mix all the ground paste and powdered spices together, rub them into the meat and leave it for an hour. Heat oil in a pan and fry chopped onion until light brown, then add tomato and whole garam masala, stir, add the marinated meat and sauté. Cover and cook for 10 minutes.

Then add enough water and cook for another 30 minutes on a medium flame. Add green chillies and rice flour mixed in water, stir, bring to one boil and take it off the heat. Serve the mutton pitali with pulao, khichuri, roti or paratha.

Shahi korma


First mix the meat with all the ingredients for boiling it, boil it and let the water dry off. Heat ghee and oil in a pan and fry chopped onion until brown, then add the meat, raisins, ground nut paste, brown sugar, liquid milk and green chillies and leave covered for 10 minutes. After 10 minutes turn off the heat, sprinkle with lemon juice and serve.

Chilli mutton


First wash the mutton well. Heat oil in a pot, add whole cumin, dried chillies, crushed garlic and minced ginger, stir, add the meat and fry for a while. Then add chopped onion, stir, add salt and tomato, sauté, cover and cook for 30 minutes.

When the meat is tender and the gravy has dried down, heat ghee in a pan and fry onion and chopped dried chillies until slightly reddish. Finally add curry leaves, stir, pour in the meat, stir for a little longer, sprinkle with chopped coriander leaves and serve.
