Weekly holidays come as a festival in every home, and most households cook something special. Often you have to think about what to cook and what everyone will enjoy. There is no need for so much thought: this week make a delicious morog polao. Young and old will love it, and it is quite easy to cook.
Ingredients
For the chicken: 2kg bone-in chicken (in large pieces), 2 cups milk, 1 tablespoon ginger paste, 1 teaspoon garlic paste, 1 tablespoon green chilli paste, 5-6 whole green chillies, 1 cup chopped onion, 1 teaspoon garam masala powder, salt to taste, 1 cup oil and 4 tablespoons sour yoghurt.
For the polao: 500g polao rice, 1 cup fried onion (beresta), 1 cup powdered milk, 1 tablespoon raisins and chopped nuts, 7-8 alubukhara (dried plums), 1 cup ghee, salt to taste and half a cup of mawa (powdered).
Method
Wash the meat, rub it with the yoghurt and ground spices and marinate for an hour. Heat oil in a saucepan, fry the chopped onion a little, add the marinated meat, sauté it well and cook until tender, then set it aside in another pot.
Wash the rice and drain. In the saucepan used for the meat, add water, the powdered milk, garam masala and the rice and stir so that all the rice gets even heat. When the rice comes to the boil, add the raisins, chopped nuts, alubukhara, salt and fried onion, cover and leave on dum (low steam). After 10 minutes, open the lid, arrange the cooked meat, cover it with some polao from underneath and the mawa, and leave on dum for another 15 minutes.
Finally, arrange on a serving dish and serve the delicious morog polao.
