Paneer that dries out and hardens in the fridge softens again after 10 to 15 minutes in lukewarm water, and stays fresh for two to three days in an airtight box of cold water changed daily, Ei Samay advises.

Paneer bought or made at home often loses its softness in the fridge and turns rubbery. Writing on Ei Samay's lifestyle pages, Ankita Das says the cold air drying it out is the cause, and that it can be made soft again in about ten minutes.

The method is simple: put the hardened pieces in a bowl of lukewarm water for 10 to 15 minutes. The moisture from the warm water works back into the paneer and restores its soft, spongy texture. Drain it and use it in cooking.

To keep paneer from hardening and fresh for a few days, the article suggests submerging the block in cold water in a clean airtight container and refrigerating it with the lid closed, changing the water every day; paneer kept this way stays soft for two to three days. A pinch of salt in the water keeps it moist and acts as a natural preservative, the article says.

For keeping paneer several weeks, it recommends cutting it into small cubes and deep-freezing them.
