Pineapple makes an excellent chutney. For anyone trying it for the first time, chef Afroza Khanam Mukta has shared her recipe with Ajker Patrika.

Ingredients: one medium pineapple, one cup of sugar, one tablespoon of mustard oil, two or three dried red chillies, a few mustard seeds, salt to taste, a little turmeric powder and one teaspoon of lemon juice.

Peel the pineapple and chop it finely. Put it in a pan with a pinch of salt, the turmeric and a little water, cover and cook until the pineapple is well softened.

When the pineapple is soft, add the sugar. It will melt and release liquid; simmer over a medium flame until the syrup thickens.

In another pan, heat the mustard oil and add the dried chillies and mustard seeds. When the seeds begin to pop, pour the hot oil over the simmering chutney; it gives the chutney a lovely aroma.

When the chutney is thick, glossy and sticky, stir in the lemon juice and turn off the heat. Cool before serving.
